How to light the paella pan correctly

We should always light the burners from the inside out. Therefore, we open the gas valve on the center burner and, using a lighter, bring the flame towards the gas outlet holes. Once lit, we can adjust the flame to our liking without needing to bring the lighter close again.

For the outer rings, we can repeat the action described in the previous paragraph. However, we can also try opening the gas valve on the next ring and blowing into it so that the already lit flame ignites the next ring; this usually works.

To turn off the burner rings, turn the control knobs fully clockwise. To ensure there are no gas leaks, you can block the gas supply at the gas regulator.

Maintenance

Once the appliance is cool, clean it with a cloth dampened with soapy water, rinse, and then dry it. Store the burner in a dry, dust-free place, protecting it from insects.

Do not use bleach or solvents for cleaning.

Precautions

The paella pans we use at home don't usually have a thermocouple valve. This valve is a safety system that prevents gas leaks if the flame goes out for any reason. Therefore, if we use paella pans at home, we should avoid doing so in an enclosed space and check regularly that the paella pan's combustion is working correctly.

Paella pans with thermocouple valves are approved for indoor use, but are usually only used in the hospitality industry because regulations require it.

Difference between types of paella pans

In the past, paellas, and all food preparations in general, were cooked over a wood fire or in ovens that also ran on wood or coal. It was after the introduction of gas into homes that paella pans were invented.

The paella burner or gas burner was created to offer better control over the fire, thus facilitating the preparation of paellas and other stews, since at any time we can easily and controllably raise or lower the power.

A paella pan is simply a gas circuit where gas enters and combusts within the rings. Its circular shape is crucial for gas combustion, as it allows for even heat distribution.

Traditional paella pan - round tube

This model of paella pan or gas burner is the oldest, being the traditional Valencian one.

This is a paella pan made of circular tubes, with the gas outlets located at the top. This allows the flame to directly impact the pan.

Paella pan +GAS - flat tube

Having a flat top allows us to place the fire outlet on both sides of the tube, thus achieving greater power and a greater distribution of heat than a traditional round-tube paella pan.

They also come with a significant improvement to the gas control dial. In this case, it has three positions: off, maximum, and minimum, all controlled with just a half turn of the screw. This will make it much easier to set the flame to minimum or maximum as needed.

Premium paella pan

This type of paella pan is a high-powered model that incorporates several improvements to make it more efficient and easier to use. The gas outlet is zigzagged and angled at 45 degrees, making it less likely that the holes will become clogged. Furthermore, the 3-position system is more optimized, allowing you to use just the right amount of heat for a slow, sautéed base.

Indoor paella pans

They are also commonly called professional paella pans, since in the hospitality industry they are usually used indoors.

They are practically the same as a high-powered paella burner, but with the addition of a thermocouple valve to control the flame of each ring. If a ring loses its flame, this safety system will cut off the gas supply to prevent the burner from wasting unburned gas.
