The Bahía variety of rice is a variety protected by the Valencia rice DO and the Ebro Delta DO .

In the 1980s, the Bahía rice variety ceased to be cultivated in the Albufera Natural Park . This was due to its low yield and poor resistance to pests, and it was replaced by new varieties with greater resistance and productivity.

Arroz Ciudad de Sueca has made the necessary efforts to recover the Bahía variety , and has succeeded in recovering a high quality rice .

To cultivate this variety of rice, instead of direct sowing, planting has been chosen. This has resulted in larger, more uniform grains.

Organoleptic qualities

The Bahia variety of rice is a medium-grain, round and pearly rice, considered one of the best for its organoleptic qualities.

It's a low-amylose variety, which gives it a great capacity for absorbing flavor . On the downside, it's a rice that can easily become overcooked if the cooking times aren't followed.

    Usage recommendations

    We can use Bahia rice to carry out different preparations.

    For making paella , it adds great creaminess, helping to achieve the much-desired socarrat. It is recommended not to exceed 16 minutes of cooking time, or the rice may overcook.

    When preparing soupy and creamy rice dishes, we recommend cooking the rice for no more than 12 or 13 minutes, as it will continue to cook even after the heat is turned off, which could lead to overcooking. This type of rice releases a significant amount of starch, which will help thicken the broth in these recipes.

    Bahia rice cooking time

    The optimal cooking time for this rice is between 12 and 16 minutes.
